Pineapple Vanilla Mojito
It's not traditional, but this drink by bartender Trudy Thomas is tropical and tasty.

Ingredients

  • 1 pineapple wedge
  • 4 mint leaves
  • 1/2 ounce agave nectar
  • 1 ounce white rum (such as Papagayo)
  • 1/4 ounce Navan vanilla liqueur
  • 2 ounces club soda
  • Garnish: pineapple wedge
  • Garnish: mint leaf

Directions

  1. Muddle the pineapple, mint and agave nectar in a mixing glass, being careful not to pulverize the mint.
  2. Add rum, Navan and ice and stir.
  3. Strain into a rocks glass and top with club soda.
  4. Garnish with a pineapple wedge and a mint leaf.
